The Tabibians opened Jack's Lobster Shack on on River Road in late November.
"We make everything fresh and not frozen," said owner Jack Tabibian's wife, Aline Tabibian, both of Edgewater.
The couple spends Tuesdays through Sundays working the restaurant, since claiming the space previously occupied by a Cuban eatery that changed locations.
Jack's Losbter Shack is a "passion project" for Jack, who grew up catching lobsters on Long Island Sound, he said. Tabibian said the best kind of lobsters are the ones that come from Maine.
His goal is to bring the nostalgia to New Jersey in a "quick-bite eatery that is also equipped to handle catering orders," he said. A delivery service is in the works.
"We have another big shipment coming in tomorrow," he said, picking up some of the lobsters from a tank near the door entrance.
"The Maine-style lobster roll was great," said Pat Herod, a customer. "I wouldn't hang out long on the hard chairs, but the atmosphere is fun and friendly."
The Tabibians hope their hot or cold lobster rolls fall into many commuters' hands.
"There are 50,000 vehicles that pass by here every day," said Aline. "We have it right here. People don't have to pay the toll to go to New York or drive four or five hours to get to Maine."
